Day for Baking

At De Oude Huize Yard we love to bake, to can and to jam. 
Today was the day for baking rusks.

The recipe has been with us since 1990.  
We have adjust the ingredients to our and our guests liking.  
It is a recipe passed down to us from Mrs Viviers living in Vanderbijlpark, Gauteng 

You will need the following
1 kg of self raising flour 
250ml of cake flour 
10ml baking powder 
5 ml salt 
120g (4 x 250ml) bran 
125ml coconut 
250ml of dried fruit (we love the cranberries and add some pecan nuts, and pumpkin seeds to it) 
375ml butter 
500ml buttermilk 
375ml sugar 
3 extra large eggs 


Set the oven on 180oC (350oF) 


Mix the dry ingredients together and add the fruit and give a mix.

Mix the dry and wet ingredients together 


Press in a suitable greased baking tray 
Cut into blocks to your preference
Or if you have one of these cutters use it for even blocks. 
Rebecca love to press the blocks into the pans 

Bake for about 45 minutes or till it is ready



Dry in an oven at 100oC (200oF)

Packed and ready 
Enjoy it with a cup of coffee or tea
